Instruções
To use Sodium Citrate and Sodium Hexametaphosphate as a thickening agent, mix 1-2 teaspoons of the powder with 1 cup of liquid for every 100 grams of the product. Heat the mixture to a gentle simmer, stirring constantly to avoid lumps. For melted cheese, add the mixture to the cheese and stir until smooth. For spherification, dissolve the thickening agent in the liquid before adding the sodium alginate.
